End of Summer Sausage Potato and Cabbage One-Pot Dinner

The first time I read about this quick sausage, potato, and cabbage one-pot dinner, I was not a believer that it could be this easy and also good enough for the family to eat.

But I had all the ingredients and it was so simple.

So I hope you trust like I did in the magic of this dish. It is one pot, 3 ingredients, only a few minutes of hands-on time, and so dang good. Oh, and my kids gobble it up too.

And the reason that its called End of Summer Sausage Potato and Cabbage one-pot meal is because that’s when all the ingredients are the freshest and having real good fresh ingredients makes all the difference in a simple dish like this. The cabbage and potato are fresh from the garden and hopefully pasture-raised hog for the sausage.

3 Simple Ingredients

  • 2 pounds ground sausage
  • A double handful of new potatoes or larger potatoes cut into chunks
  • 1/2 of a large head of cabbage or 1 small cabbage, we usually use green
  • Plus a bit of salt and pepper

Since we started purchasing a whole hog, I have more than enough ground sausage in the freezer at all times. The flavor of pastured pork is so amazing and if you haven’t tried it yet, I would highly suggest it. Especially for recipes like this where it really is the shining star.

I usually have the pork defrosted and ready to go in the fridge pretty much most nights. And because at the end of summer and early fall, there is always an abundance of potatoes and cabbage from the garden or local farms, this is an easy last minute meal I can count on.

Tools Needed for Sausage Potato One-Pot Dinner

  • Cast iron enamel pot with a lid is my favorite, but any heavy bottomed pot with lid is good
  • A serving spoon

That’s it!

I suppose you could try to make this in the Instant Pot, but I like how the ground pork browns up in the cast iron pot and I don’t think that would work with the Instant Pot. But give it a try and let me know.

How to Instructions for Sausage Potato Cabbage One-Pot Dinner

Scrub up the potatoes and cut into large chunks unless they are smaller like a golf ball.

Cut up the cabbage into large chunks

Put your pot on the stove and turn up to medium/high heat. Place the sausage in the pot and break it up as it browns a bit.

Salt and pepper the ground pork.

Before the pork cooks too much, place the potatoes on top of the pork and then add more salt and pepper.

Last put the cabbage on top and once again salt and pepper.

Turn down to medium-low heat.

Place the lid on top and leave it alone for 20-30 minutes. Don’t be tempted to stir it up.

After 20-30 minutes, check to see if the sausage is browned up and potatoes are soft. They should be, but go a bit longer if needed. If the sausage isn’t crispy, cook longer. The picture below on the left isn’t done yet. The right is done.

To serve the dinner, all you need to do is scoop out a serving of all three parts to each person. We also serve sour cream on top. Most of my family likes the sour cream, but a few gobble it down without. I hope you all love this sausage potato cabbage one pot dinner as much as we do.

This recipe feeds our family of five with a little leftovers. You can half the recipe if you have 2-3 people.

  • 1/2 -1 head of cabbage, depending on size
  • salt and pepper
  • sour cream for serving

Notes

Try serving this with sour cream. Most of my family prefers it that way.

This recipe can easily be scaled up or down for more or less people.
