How to Make Fresh Tomato Sauce Freezer Packs
The summer garden is full of tomatoes, yet you don’t think you can make any more canned products. Or maybe you just have a small amount of extra tomatoes you would like to preserve for the winter months. Whatever it is, if you have some extra cherry tomatoes, this is a great recipe for you. It is basically throwing the best parts of summer into a bag and freezing them for a later time when you need that pop of fresh to get you through to the next summer full of the bounty of backyard tomatoes. Why Make these Fresh Tomato Sauce Freezer Packs?
This is such an easy preserving project that can be done in one big swoop or a little bit along the summer as you have bits of extra cherry tomatoes.
I like to use our Food Saver for this project because it gets the air out of the bag in a way that I can’t with regular zip top bags. But if you don’t have one, zip top freezer bags can work too.
Ingredients Needed
All the ingredients needed come from my garden and that is what makes the sauce so flavorful. The produce is frozen at their peak. I suggest you do the same if you can.
- Fresh cherry tomatoes rinsed and dried
- Sliced onions
- Fresh peeled garlic
- Fresh basil sprigs

Instructions for Fresh Tomato Sauce Packs
- Gather up all the cherry tomatoes you want to use and rinse off. Put them on a towel to dry off while you gather the other ingredients.
- Rinse off the springs of basil and let dry too.
- Peel up and slice the amount of onions needed. I use the small fresh onions from the garden for this project.
- Then peel the garlic. No need to chop it up.
- Take the food saver bag and fill it with the ingredients and then seal it up.
- Place the bags in the freezer and use up within the year.
- When you want to make sauce, remove from the freezer and pop it into a hot pan with olive oil, salt, and pepper. No need to defrost. Cook down into a sauce and then blend up.
- Serve as is or add spices of choice. You can also add a bit of heavy cream or freshly grated parmesan cheese.
