Simple Sourdough Pancake Recipe
One of the easiest ways to use up sourdough starter is with this simple sourdough pancake recipe.
We have been through so many pancake recipes through the years. Always searching for another one that might be more fluffy or brown up just right.
Well the search ended after I made my sourdough starter and started making sourdough pancakes. This recipe has pretty much been it in our house. It isn’t too dense that the outsides are cooked before the insides, leaving raw batter. They don’t spread out all over the pan leaving a thin batter mess. What they are is a perfect fluffy pancake ready for syrup or yogurt and berries.

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- 1 1/2 cups milk (or more to thin the batter)
- 1 cup sourdough starter or discard
- 2 tablespoons oil (avocado, lard, or coconut)
- 1 large egg beaten
- 1/2 teaspoon vanilla (optional)
- 1/4 teaspoon cinnamon (optional)
I like to use the vanilla and cinnamon in my pancake recipes because that’s what we did growing up. It may not be for everyone, but I like the sweetness it adds.
Step by Step Instructions for Simple Sourdough Pancakes
- Mix the flour, baking powder, baking soda, sugar, salt, and cinnamon together in a large bowl.
- Add the milk, sourdough starter, oil, egg, and vanilla.
- Stir together. Add more milk if too thick or a bit more flour if too thin of a batter.
- Heat up a skillet. When warm, add a little butter or coconut oil to the skillet so the pancakes do not stick.
- Pour about 1/4 cup of batter onto the skillet. Let it cook until it starts to bubble up.
- Flip the pancake and cook for another 1-2 minutes.
- Remove and serve with butter and syrup or my favorite – yogurt and jam.
