The Best Chocolate Zucchini Bread

Every year I grow way more zucchini than one family ever needs. We love eating the zucchini in many ways, but this chocolate zucchini bread is one of our favorite ways. It is easy to make and comes out so moist and chocolatey and is usually gobbled up before it even has a chance to cool down.

We actually have three zucchini breads that are favorites and I make dozens of them when we have fresh zucchini in the summer. We eat our fair share fresh, but I end up freezing many loaves to enjoy throughout the winter. I do this because I am not a fan of freezing fresh zucchini to use later.

My first go-to zucchini bread is my pumpkin zucchini bread. If you haven’t tried it out yet, you must! But sometimes we don’t have pumpkin or want a bit more of an indulgent loaf of bread. This chocolate zucchini bread fits the bill. It is also my kids favorite type of quick bread. They love the chocolate flavor and extra chocolate chips.

The recipe makes two loaves. All my quick bread recipes make two loaves. I figure that with not much more effort, you should have one to eat right away and then another to give away or freeze.

This loaf freezes really well for later on. When ready to eat the frozen loaf, I will take it out of the freezer to defrost and then warm up slices in the oven. It is perfect sliced up with a little butter.

Ingredients for Chocolate Zucchini Bread

  • 3 eggs
  • 1 cup oil (I like to use avocado or melted lard)
  • 1 3/4 cups sugar
  • 1 tablespoon vanilla
  • 2 1/2 cups flour
  • 1/2 cup baking cocoa
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 2 cups zucchini shredded and squeezed out if really wet
  • 1 cup chocolate chips (optional)

Step by Step Instructions for Chocolate Zucchini Bread

1. In a mixing bowl, beat the eggs and sugar together. Add in the vanilla.


2. Combine the dry ingredients and add to the wet mixture (or save yourself a bowl and add the dry ingredients right on top of the zucchini mixture) and mix until just incorporated.

3. Add in the zucchini and chocolate chips.

4. Pour into 2 well greased loaf pans.

5. Bake at 350 degrees for about 1 hour.

6. Remove from the oven and cool in the pan for about 10 minutes and then remove the loaves and move to a cooling rack.

7. Eat right away or these loaves freeze really well too.

Yield: 2 loaves

This chocolate zucchini bread is a must try. It is moist and full of chocolate flavor. Perfect for a morning or mid afternoon snack. The recipe makes two large loaves.

Notes

This is a great recipe with plenty of chocolate flavor without the chocolate chips, but we love it best with the addition of the chocolate chips. You can leave them out or add them in.
