Easy Lemon Curd

If you love a nice tart lemon flavor with sweet undertones, you are in for a treat with this quick lemon curd recipe.

It’s perfect for adding to a multitude of baked goods or sneaking a bite right off the spoon. I especially enjoy adding a bit to my homemade yogurt to have as a sweet treat in the evening.

I have to admit, though, that after trying this recipe and loving it, I also wanted to try a stovetop recipe because, well, lemon curd, in the microwave…

I just thought that from a from-scratch cooking kind of gal that would be weird, and yea, it kinda is. But it’s so easy and it would be all the same ingredients anyway.

So I never tried that stovetop recipe. This one is luxurious and so easy, there is no reason to change it.

But if you want, you can just pop it in a pan and warm on the stove instead of in the microwave. Just keep a close eye on it, stirring frequently and watching for it to thicken.

Just 4 Simple Ingredients Needed

  • Lemons – hopefully you can get ahold of some homegrown/organic because you will be using the zest along with the juice in this recipe
  • Sugar
  • Eggs
  • Butter

How to make Lemon Curd

  1. Melt the butter in the microwave and set aside to cool slightly.
  2. Whisk the eggs and sugar in a microwave-safe glass bowl.
  3. Whisk in the lemon juice and then the zest.
  4. Last, whisk in the melted butter.
  5. Place in the microwave and and microwave at 50% power for one minute. Remove and stir.
  6. Now microwave at full power for one minute. Remove and stir. Continue with one minute intervals and stir each time until the curd has thickened enough to stay on the spoon. It took me about 3 one minute intervals, but note that the curd will continue to thicken as it cools.
  7. Remove the curd one last time and strain through a fine-mesh sieve to remove the zest. For those wondering, yes this has to be done for the correct texture.
  8. Pour curd in serving container or glass jars to store in the fridge for up to 3 weeks. (good luck making it last that long 😉

Ingredients
  

  • 1/2 cup unsalted butter
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 egg yoke
  • 1 cup fresh lemon juice
  • lemon zest from 3 lemons

Instructions
 

  • Melt the butter in the microwave and set aside to cool slightly.
