Homemade Lemon Curd in the Microwave
If you love a nice tart lemon flavor with sweet undertones, you are in for a treat with this quick lemon curd recipe. It's perfect for adding to a multitude of baked goods or sneaking a bite right off the spoon.

- 1/2 cup unsalted butter
- 1 1/4 cups sugar
- 3 eggs
- 1 egg yoke
- 1 cup fresh lemon juice
- lemon zest from 3 lemons
Melt the butter in the microwave and set aside to cool slightly.
Whisk the eggs and sugar in a microwave-safe glass bowl.
Whisk in the lemon juice and then the zest.
Last, whisk in the melted butter.
Place in the microwave and and microwave at 50% power for one minute. Remove and stir.
Now microwave at full power for one minute. Remove and stir. Continue with one minute intervals and stir each time until the curd has thickened enough to stay on the spoon. It took me about 3 one minute intervals, but note that the curd will continue to thicken as it cools.
Remove the curd one last time and strain through a fine-mesh sieve to remove the zest. For those wondering, yes this has to be done for the correct texture.
Pour curd in serving container or glass jars to store in the fridge for up to 3 weeks.
