Skillet Fried Sweet Corn

Nothing beats fresh summer corn right on the cob. But I have found so many other ways that my family is enjoying it. This quick skillet fried sweet corn is one of the favorites we have been eating lately.

You can use fresh corn that you cut right off the cob. Or if you have some summer corn saved up in your freezer, like I do, you can use that also. That way you can enjoy this all year round.

We have tried several recipes for skillet corn or creamed corn, but found that this one fits our taste the best. It isn’t too heavy (despite the cream) or too sweet.

Ingredients for Skillet Fried Sweet Corn

  • 5-6 ears of corn, kernels removed
  • 4 tablespoons of butter
  • 1 tablespoon of sugar (optional – not needed if your corn is real sweet)
  • 2/3 cup of water
  • 2-3 teaspoons of corn starch
  • 1/2 cup of heavy cream (can use a little less or more)
  • Salt and pepper to taste

How to make the Skillet Corn

Get out your largest cast iron skillet. If you don’t have one, a regular pan can work.

Cut the corn off the cob. I have been using this amazing corn kernel remover to make it much easier, but a sharp knife will do the trick.

You don’t need to worry about the measurement of the corn because this recipe doesn’t have to be exact. 5-6 ears of corn are about right. If your corn is extra small, you can add another. Or use 4 if that’s what you have and adjust the other ingredients slightly.

Next, turn on the stove to medium heat. Melt the butter in the hot skillet. Add the corn and stir it up for a few minutes, cooking it up a bit. Add the water to the skillet. Stir it around and cook for a few more minutes. Then sprinkle the corn starch over the top and stir it in. Next, add the cream and again, stir it up. Check the flavor and add salt and pepper if needed. You can also add some sugar if your corn isn’t sweet enough.

Once it is at the desired consistency, you are done! Serve it up warm.

It goes with so many things, but a few are grilled chicken or steak, or a roasted chicken and some greens.

Variations

Instead of using butter in the skillet, you can fry up a few pieces of bacon first. Then remove the bacon and use the grease in the pan for the corn. Crumble the bacon over the corn at the end.

Add finely diced red and orange bell pepper to make confetti corn. It makes for a beautiful look and adds an extra element to enjoy.

    This is a delicious and super easy side that will absolutely become a staple in our home. We added bacon and it gave it a yummy smoky taste that everyone loved! You know it’s a good one when you are still thinking about it after dinner and can’t wait to make it again!
